Turtle Cheesecake Recipe
Smooth and Sweet!

Caramel, chocolate, pecans baked into a delicious cheesecake

One of our most requested desserts, Turtle Cheesecake always works when kids are coming to the party - except they might ask about the “turtle”...

We have also added chopped Snickers Bars to this recipe. The only issue you’ll have with this one is that you may need to bake two.

Be sure to spray your pan with vegetable spray, and put a pan underneath it in the oven, just in case.

Ingredients

2 cups graham cracker crumbs
2 tablespoons sugar
1/3 cup melted butter 14 ounces individually wrapped caramels, unwrapped 1 (5 ounce) can evaporated milk 1 cup chopped pecans Flour to coat the pecans 24 ounces cream cheese 1/2 cup white sugar 1 teaspoon vanilla extract 2 eggs 1/2 cup semisweet chocolate chips



Directions

Combine crumbs, butter and 2 tablespoons sugar. Firmly press mixture into bottom and up the sides of a 9 inch springform pan that has been well greased with vegetable spray. Bake this for 10 minutes in a preheated 350° oven.

Melt caramel in top of a double boiler with the evaporated milk over hot water, not over direct heat.

Combine the rest of the ingredients except for the pecans and the chocolate chips. Mix well.

Remove the crust from the oven and pour the caramel and milk over the baked crust.

In a separate bowl, mix the chocolate chips and pecans. Coat them with flour, shaking and spreading it all around each chip and nut. Add the floured chips and nuts to the cream cheese mixture. Careful not to add the excess flour. Carefully stir to combine. Don't overstir. Pour into crust.

Bake in a preheated oven at 350° for 45 minutes. Out of the oven and into the refrigerator to chill overnight.

We like to serve this with shaved white chocolate on the top, and with pecan halves.

TIP: You can cut this cake and plate up the pieces before your guests arrive if you have enough room in your fridge, and if you can resist swiping one before dinner. Good Luck!
