Strawberry Salad with Avocados

You are the envy of any fine restaurant
when you serve this beautiful strawberry salad.

Our Strawberry Salad is as beautiful as it is delicious.

Follow our directions for a tangy and sweet strawberry vinaigrette dressing which we encourage you to change up according to your own taste. We’ll show you how.

Important in this salad is the freshness of both the strawberries and the avocados. It can take several days for the avocados to completely ripen. Plan your shopping accordingly.

TIP: You may do better at a local food and produce distributor than your local grocery store. Check around and see.

Take your time when you assemble the strawberry salad. It will make quite a statement on your buffet table. Your guest will know right away that you did something quite special for them.


This recipe will feed 50 people, if you are you are serving entrees and/or appetizers. Remember that your guests are going to eat a little over a pound of food per person for dinner. Read about Party Food Quantities and how to plan for the right amounts.

Shopping List for 50 People:

___3 pounds of baby greens salad mix. 3 pounds is the package size that fruit and produce suppliers use for this product often selling it as mesculine. Your local grocery store will have something like it, and smaller packages. Three pounds should do it.

___18 ripe avocados. Remember, you may have to buy these up to a week ahead of the time, in order to properly ripen

___3 - 4 pounds of fresh strawberries

___2 pounds of frozen strawberries

___Small amount of vegetable oil

___1 – 2 lemons

___Small amount of paprika

___Salt and pepper

___1 disposable aluminum pan 12 ¾” x 20” x 2 ½”

___1 5-pound bag of ice


Two Days Before the Party:

Remove the frozen strawberries from the freezer and place them into refrigerator to thaw.

One Day Before the Party:

Prepare the Strawberry Vinaigrette Dressing:

Pour the thawed strawberries into a blender bowl, blending them until smooth and a thick liquid. Add ½ cup of vegetable oil, the juice of one lemon, one table spoons of paprika, 1 teaspoon of salt and ½ teaspoon of pepper. Process/blend again.

Store the strawberry vinegarette dressing in a bowl in your refrigerator.

Just before adding the dressing to the strawberry salad itself, and after its marinated overnight in the refrigerator, check it for taste. If anything, you might want to add some more lemon to increase the tartness. You can also add water to make it less thick.

On the Day of the Party:

Wash the fresh strawberries, remove the green leaves and cut into slices, about 3 – 4 slices per strawberry. Immediately pack the cut strawberries into zip-lock bags as they are cut and refrigerate.

Cut each avocado in half, cutting around the pit and the center. Twist the cut halves and separate leaving the pit in one of the halves.

Carefully work out the pit with a knife, peel the skin away from the outside and cut the avocado Long, thin pieces.

Immediately pack the avocado into zip-lock bags as they are cut and refrigerate.

Just before you’re ready to serve, open the bags of baby greens mix and pour into the large disposable aluminum pan.

NOTE: Baby green salad mix and mesculine usually comes pre-washed, ready to use. Check the bag, but there should be no need to wash this again.

Spread the greens throughout the pan, fluffing it up and mixing it through.

Remove the strawberry vinaigrette from the refrigerator and stir completely with the spoon. Pour some of the dressing onto the lettuce mix, tossing it around with your clean hands.

Artfully and beautifully arrange slices of strawberry and pieces of avocado on top of your lettuce mix. Cover with film and refrigerate.

Presentation fo the Strawberry Salad: Your Eyes Eat First

Place the refrigerated salad mix into a chilled chafing dish. Pour the remaining strawberry vinaigrette dressing into a bowl, placing it in front of the salad on your buffet table. Here's how to use a chafing dish as a chilled server.


As a leftover, this salad has a very limited life. However, collect the unused strawberry and avocado, which can be bagged in zip-lock bags and frozen.

One left-over recipe tip we have is to blend it up with some milk and banana for a delicious fresh-fruit smoothie.
