Southern Fried Chicken Recipe

Our Southern Fried Chicken Recipe honors this timeless classic,
but makes it easy for your party with wing drummettes.

The drummettes are party-friendly for sure, easy to eat while standing. Follow our recipe - it’s simple, and simply delicious!

We’ll be using a chafing dish to hold and serve the chicken, with just one sterno fuel lit, instead of two. It’s also helpful to put a kitchen towel under the chicken (cloth, not paper.)

We also suggest that you don’t cover the chicken tightly with the chafer lid - instead, keep it set sideways so that the steam and heat won’t disturb the fry coating on the birds.

Ingredients for Southern Fried Chicken Recipe

6-7 pounds of chicken wing drummettes
    available frozen from grocery stores
Oil for frying
Garlic Powder
4 cups flour
1/2 tablespoon salt
1/2 tablespoon pepper
1 tablespoon paprika

Directions

Place the thawed chicken drummettes in a large mixing bowl with the flour and seasonings. Using your hands, work the seasoned flour into the chicken.

Get your chafing dish up and running, with only one sterno fuel.

In a large pan or deep fryer, heat enough oil to cover the chicken to 350° . Fry the wings until golden brown - shouldn’t be more than 4 minutes. Check a couple of pieces with your thermometer - you’re looking for 165° . When you get to that temp, remove and drain onto paper towels, then put the chicken into the warm chafing dish. Remember to put a cloth towel under the chicken.

Meanwhile, start another batch in your frying pan. Keep frying, baking, and covering cooked chicken.

Remember to check the water level under the food in the chafer. If you need to add more, always add boiling water.
