Shrimp Dip Recipe

OK, “Shrimp Dip” is easier to say... But that doesn’t mean it’s not true!!! Wait ‘till you taste it.

1 pound of shrimp
8 ounces cream cheese
8 ounces mayonnaise
1/4 cup onion, chopped
2 scallions, finely chopped
1 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1 tablespoon horseradish
1/8 teaspoon pepper
1/8 teaspoon salt
Buy the shrimp already out of the shell and already cooked if you can. Otherwise, cook, shell, devein and detail. Then lightly process in a food processor or in a blender - not too much. You don’t want a paste, you want crumbles. And - you want to save whatever liquid comes from the shrimp.
Combine the rest of the ingredients with the shrimp. Transfer the dip to a smaller bowl (which can be your serving bowl,) cover tightly with film, and refrigerate overnight.
On the day of your party, uncover the dip and pour off and residual liquid. Give it a good stir, and garnish with a few shakes of paprika, chopped scallion, chopped tomato, etc - something with lots of color.
You can use so many different chips and breads for this great dip, and, you can dip chilled shrimp in it too - just delightful! Talk about Shrimp Cocktail...!
We often take a part of this dip and add some ketchup and more horseradish to it - a sort of Shrimp and Shrimp Cocktail all in one. There are folks who go nutty about this style, so we often have some available.
