Maria writes: “I am making potato salad for 50 guests. There will be other food, salads and two main dishes. Do you have a recipe for this many people? How many potatos do I need to get? Thanks“

Potato Salad
Ingredients

18 pounds of potatoes, peeled and cut into cubes
3 dozen hard boiled eggs, cut into small pieces
2 T - salt
1 T - pepper
2 T - garlic powder
2 cups chopped red onion
3 cups chopped green bell pepper
1 small jar bread & butter pickles, chopped, with liquid, we love Mrs. Fannings Pickles
1 head fine chopped fresh parsley
2 quarts mayonnaise

Directions

Boil up the cubed potatoes until they are just tender. Drain off the hot water and cool them in cold water, with ice if you can.

Allow the drained potatoes to completely cool in the refrigerator, overnight if possible.

Same with the eggs - hard boil them, lots of cold water to cool off, and refrigerate overnight if you can. Peel and cut them the next day.

In a very large mixing tub, start with the mayo. Add the seasonings, chopped pickle and juice, onion and peppers. Stir well.

Fold in the eggs and potatoes. Wrap the mayonnaise around each piece.

Cover the tub with film, pressing the film right down onto the surface of the salad. Refrigerate until you’re ready to serve.
