Pita Roll Ups Recipe Shopping List for 25 Kids:
___12 pita breads, 5 or 6 inches round - the thin kind!
The following quantities will make all 25 portions:
Ham and Cheese:
___1 pound sliced Deli Ham
___1 – 16oz pack Shredded Cheese
Jam and Cream Cheese:
___1 – 16 oz of Jam, your favorite flavor
___1 – 16 oz Cream Cheese
Bologna:
___1 pound bologna
___1 cup mayonnaise
___1 small jar sweet relish
Procedure:
When you’re ready to build the Pita Rolls, remove the pita from the bags one at a time – and save the bags.
Using a sharp knife, carefully cut away the outside edge, all the way around.
Notice how thin the pita is:
So much easier to roll.
If the pita dries out and is difficult to roll, hold it over a pan of boiling hot water. The steam will moisturize it, and allow it to roll.
When finished with your cut, put the pita back into the bag and reseal it.
Ham and Cheese Recipe:
The day before your party, separate the pita one at a time so that they don’t dry out.
Spread out a piece of ham on the thin bread, and sprinkle some cheese as well.
Don’t put in too much ham and cheese, just a slice and a sprinkle.
Fill a small bowl with water and keep it next to where you’re working. As you complete each roll, sprinkle a little water onto the outside edge of the cheese before you roll it – just a very little bit.
Roll the pita tightly and wrap each one individually with film.
Place the wrapped Pita Rolls in the refrigerator over night.
Jam and Cream Cheese Recipe:
Up to two days before the party, began by warming to the jar of jam and the cream cheese.
You remove the jam lid and microwave it for a bit; same with cream cheese. Just get them soft and workable.
Separate the pita one at a time.
Spread a bit of your jam and cream cheese, not too much.
Roll the pita tightly and wrap each one individually with film.
Place the wrapped Pita Rolls in the refrigerator until ready to serve.
Bologna Recipe:
Up to two days before the party, process the bologna into a spreadable paste.

Transfer to a small bowl and add in ¼ cup of the sweet relish. Combine well.
Separate the pita one at a time. Spread a bit of the bologna mix, not too much.
Roll the pita tightly and wrap each one individually with film.
Place the wrapped Pita Rolls in the refrigerator until ready to serve.
