No Bake Chocolate Oatmeal Cookies

Chocolate and oatmeal! Too good! And if that’s not enough, you make these the day before your party

The secret to a carefree party is to do as much as possible ahead of time. The problem is: with these cookies, they might not last until party time...!

These are light and hard to eat just one. We suggest that you over-estimate when planning your numbers, and maybe include another chocolate dessert.

1 cup butter
1 cup white sugar
1 cup light brown sugar
1/2 cup evaporated milk
1/3 cup cocoa
1 cup coconut, or chopped nuts, or both
3 cups quick oats


Careful about the cooking time - follow carefully:

Prepare cookie sheets with wax paper. Or if you have room, spread the paper on your counter.

In a large bowl, mix up the oats and the coconut/nuts.

After that, using a medium saucepan, melt the butter. Then add the milk, sugars and cocoa. Stir without stopping with a flat bottom stirrer until it comes to a boil.

Now - be careful to time it just right. You want it to boil for 2 minutes, not more, not less. 2 minutes.

Pour the boiling liquid onto the oatmeal mixture. Quickly combine it together and without stopping, form golfball size rounds and put them onto the wax paper. Press the rounds down into the shape you want them to be. They won’t take long to cool.
