Go ahead and use a store
bought graham cracker crust
if you need to save even
Use a quality springform pan
when you’re making your own
crust - and enjoy!
If there's a caution to this recipe, it would be storage life. Because there's no cooking, it won't hold up as long as a traditionally baked cake. The idea works best when you know that you will serve all of it, or finish it by the next day. Don't stretch it too far.
Portions/Servings This recipe will feed 12 people.

1 graham cracker crust:
2 cups graham cracker crumbs
2 tablespoons sugar
1/3 cup melted butter
1 1/2 cups semisweet chocolate chips
1/2 cup granulated sugar
11 ounces cream cheese
1/4 cup butter or margarine, softened
2 cups frozen whipped topping, thawed
Fresh fruit, shaved chocolate and/or
cream for a topping or garnish
Combine crumbs, butter and 2 tablespoons
sugar. Firmly press mixture into bottom
and up the sides of a 9 inch springform pan.
Melt chocolate chips in a double boiler
over hot water, stirring frequently
until smooth and melted. Let cool.
In large mixer bowl beat cream cheese,
sugar and butter until smooth. Slowly blend
in the melted chocolate. Fold in whipped
topping by hand, carefully and slowly, until
blended. Don’t over blend.
Put the cheese chocolate filling mixture into
prepared graham cracker crust. Cover and
chill until firm.
