Mini Cheesecake Recipe - Perfect for Parties

Bite size, easy to handle and eat - delicious and very party-friendly.

We like to use different toppings like cherries, chocolate shavings, fresh fruits - you name it.

Use your smallest muffin pan with paper muffin cups, or you can get the bite-size pans (“tassie pans”) with speciality cups at most party supply stores.

2/3 cup graham cracker crumbs
2 tablespoons sugar
3 tablespoons melted butter

12 ounces semisweet chocolate chips
24 ounces cream cheese, softened
1 cup white sugar
3 eggs
1/2 cup sour cream
3 tablespoons all-purpose flour
2 teaspoons vanilla extract


Combine crumbs, butter and 2 tablespoons sugar. Press about 1/4 inch of crumbs into the small paper muffin cups already placed in small muffin cup pans. Refrigerate.

Melt chocolate chips in top of a double boiler over hot water, not over direct heat.

Combine cream cheese, eggs and 1 cup sugar in a mixing bowl until smooth and creamy. Pour in chocolate mixture, blend well. Add 1/2 cup sour cream, flour, vanilla. Blend until smooth. Pour into crust.

Bake in a preheated oven at 350° for 30 minutes or until filling is firm. If you are using bite size (tassie pans,) reduce time to 15 minutes. Check for firmness and adjust cooking as needed. Chill overnight in the refrigerator.

We like to garnish this with fresh fruit, whatever is in season that looks great. Mint leaves are a nice touch as well.

TIP: When using tassie pans, bake for a few minutes beyond firm, just 3-4. When cooled and ready to serve, you can toothpick them for easy and fun eating.
