Italian Chicken Recipes
12 boneless, skinless, split chicken breasts
cut into 1” pieces
Olive Oil for frying
Salt, pepper and garlic powder to taste
Set up your largest frying pan on the stove with some olive oil heating. Sprinkle seasonings on the chicken, and toss in about as many pieces of chicken pieces that will fit into your frying pan. In the hot pan, brown the chicken, flipping them over. This should take just a few minutes.
Put the browned chicken onto a cooking sheet covered with foil and put it into the preheated oven for 5 minutes. Check a couple of pieces with your thermometer - you’re looking for 165° . When you get to that temp, put the chicken your chafing dish and keep warm. Meanwhile, start another batch in your frying pan. Keep frying, baking, and covering cooked chicken.
Creamy Chicken - In a saucepan, combine 4 cans of condensed cream of mushroom soup, 2 cups of chicken stock, 1/4 cup chopped fresh parsley, 1/4 cup fresh chopped basil, 2 cups of chopped plum tomato and 1/4 cup butter. Cook over low flame until the butter is melted, and pour over the chicken.
Chicken with Wine - In the same frying pan you used for the chicken, combine 1/2 bottle white wine, 1/4 balsamic vinegar, 2 tablespoons brown sugar, 1 tablespoon fresh lemon juice, 1/2 cup fresh chopped oregano, and 1/4 cup butter. Cook over low flame until the butter is melted, and pour over the chicken.
Chicken with Garlic - In a saucepan, saute 8 cloves of crushed garlic in olive, until just browned. Add one bottle of white wine, 4 cups of cherry tomatoes cut in half, 1 cup of stuffed olives cut in half, and 1/4 cup fresh chopped basil. Cook over low flame until he first signs of a boil, and pour over the chicken.
Add stock or wine to thin the sauce if needed as the party progresses. And remember to check the water level under the food in the chafer. If you need to add more, always add boiling water.
