1-2 pounds of medium shrimp
1 pound of salted butter
8-10 cloves of garlic
Peel, devein and de-tail the shrimp.
Normally we would be cautioning you about making sure the shrimp are fully cooked, but the cooking process is going to continue in the chafing dish. If you're just having a few folks over, and the foods will be eaten quickly, add some cooking time in the hot water (below). If lots of people are coming, and the party will last a while, then you can rely on the food warmer doing the rest of the cooking on it's own.
Drop them into boiling water for a few minutes until the centers are white. Then plunge them into ice water and refrigerate.
Melt the butter in a saucepan and add 2 cups of boiling water. Crush and chop the garlic, add it to the butter. When the butter is melted, turn off the heat and let it sit for a while.
Get your chafing dish heated up and ready. Pour the melted garlic butter into the chafer, and put the shrimp on top. Using medium heat, keep it covered until the shrimp are warm.
We like to sprinkle a little parsley, with some lemon garnish, and we always have a bottle of hot sauce around. I can smell the garlic now...!
