Tanya writes: “Hi - we’re having a winter party, half outdoors and the rest inside. It will be for 50 people and I’m serving stuffed shrimp once everyone comes in from outside. We will have other foods, but I need help with the quantities and a good recipe for the shrimp. Thank you!”
Ask-a-Caterer Replies: Hey Tanya - sounds like fun! We love cooking shrimp and we've got a great recipe on the site, and some more ideas to help you:

Baked Stuffed Shrimp
Our Stuffed Shrimp is completely party-friendly with little or no concerns. So easy!
As you look at our recipe, you’ll see we call for 5 pounds of larger, U20/30 size (20-30 to a pound) of shrimp. You are here in New England and have access to many different kinds of shrimp, all at near record low prices. So now, even in 2012, you can still get extra large to jumbo sizes at 1980s prices.
Our stuffing is true shrimp stuffing, where we call for 3 pounds of the very small “salad” shrimp, U120s. These tender yummies will complete the stuffing and accompany their larger cousins very nicely.
The true beauty of this recipe is simplicity, especially when you use the
we describe. You will want to have one or two to keep your hot foods hot. You can also have them set up to keep cold foods cold. Read all about how they work and where to get them. (They are really inexpensive, and you can get disposable ones too, usually locally.)
You can also build this dish the day before and serve at your party effortlessly. Check out Ahead of Time for Stuffed Shrimp which shows you all the tricks.
The other secret we would show you is to use some Seafood Cooking Base. Give them a look at how we use bases, what they are and where to get them. This is true professional cookery where we show you how we really do it - although most caterers and restaurant operators would never admit it!
We’re here in New Hampshire too, so we just might stop down for this party - sounds like too much fun. Best of luck Tanya!
