On a bed of shaved ice with lots of greens and lemons, we mix real crab with a touch of mayo, scallion and spices, just a touch. It’s like have pure crab on a piece of bread or a cracker. Truly good, but at a price.
Cost is a factor. Your party can get pretty pricey with fresh crab, but when you want to go all out, this is the way:

4 pounds of fresh crab meat3 finely chopped scallion1/2 cup (8 oz) mayonnaise
1/4 teaspoon lemon juice
1/4 teaspoon salt1/8 teaspoon pepper
Combine the ingredients, mixing very well. Transfer the dip to a smaller bowl (which can be your serving bowl,) cover tightly with film, and refrigerate.
Locate two glass bowls that will together, so you can see one through the other. In the larger one, assemble lettuce greens and shaved ice. Push the empty bowl in the largerone, on top of the ice, and place them both in the freezer.
We have also used food coloring in the ice, usually blue or green.
When it’s time to serve, line the smaller bowl with more greens and place the crab on top. Put out the bowls on your buffet, adding more ice to the lower bowl as needed.
We serve this as is, with a bottle of hot sauce nearby and a little lemon garnish. We do put out a variety of fine breads,
