1 Chocolate Cake Mix
1 - 14 ounce can sweetened condensed milk
2 ounces squares unsweetened chocolate, melted
1/2 cup cold water
1 package instant chocolate pudding mix
1 cup whipping cream, stiffly whipped
Preheat oven to 350°. Prepare and bake cake mix into two 9-inch pans. Remove from pans; cool completely.
Melt the chocolate in a double boiler, over, not in, hot water.
In large mixing bowl, beat sweetened condensed milk and chocolate until smooth. Beat in water and pudding mix until. Chill at least 2 hours. Beat again until nice and smooth. Carefully fold in whipped cream. Chill at least 2 more hours.
Use the mousse for a filling with the 9” cakes, and as a frosting on the top and sides. We like to garnish with shaved chocolate.
If a layered cake isn't working for you, this can easily be a pan or sheet cake, using the mousse as a top frosting. We've also done this as a layered torte, with several thin layers of cake and mousse filling.
