Chocolate Eclair Dessert Recipe

What do we make for the kids?

It’s a nice party, and you want something special for everyone. This Eclair Dessert works for kids of any age!

Use a deeper pan and layer it up if you want. And it only gets better after a day in the fridge. Make it ahead of time.

This started out as a comfort food for our kids, and one thing let to another. Now we serve it at functions like you wouldn’t believe. But it’s still a family favorite our Holidays can do without.


This recipe will feed 12 people, or more. Read about Party Food Quantities and how to plan for the right amounts.

Chocolate Eclair Casserole
Shopping List for 12 People:

___1 box of graham crackers

___2 packs of instant vanilla pudding

___1 quart heavy whipping cream

___1 teaspoon white sugar

___1 teaspoon vanilla

___1 pack pre-made or home made chocolate frosting


The Day Before the Party:

Make up the vanilla pudding according to box directions.

Spray the bottom and sides of a 9 x 13” pan and start with a layer of graham crackers.

Snap as many as you need to make sure the bottom is covered.

Start with a layer of vanilla pudding.

With your electric mixer, whip up the heavy cream with the sugar and vanilla. Cover the pudding with cream, then add a layer of crackers.

Chocolate goes on the crackers.

More pudding...

More cream - and then repeat the process.

We finish with a layer of cream. The eclair should be 2 inches thick or so.
Refrigerate overnight.

Presentation: Your Eyes Eat First

We used glass so you can see some of the layers.

Take some time when serving. Wipe your knife and utensils after each cut. Or, serve it in the dish with a bunch of spoons (like we do)! OMG... - what till you taste this!
