Chocolate Chip Cheesecake Recipe

Chocolate, chocolate and more chocolate! Are we in Heaven?!

Oh my... Chocolate chips
baked into a chocolate
cheesecake! And baked in a
chocolate cracker crust too.

We like to mix different kinds
of chips, and we add nuts
sometimes too - just don’t
forget to coat them with flour.

Remember to cure the cake
in the oven, and then cool
overnight in the fridge.

Ingredients

2 cups graham cracker crumbs
1/2 cup cocoa
2 tablespoons sugar
1/2 cup melted butter
12 ounces semisweet chocolate chips
24 ounces cream cheese, softened
1 cup white sugar
3 eggs
1/2 cup sour cream
3 tablespoons all-purpose flour
2 teaspoons vanilla extract
4 ounces of mini-chocolate chips
4 ounces of semi-sweet chocolate chips
4 ounces of white chocolate chips
Flour to coat the chips




Directions

Combine crumbs, butter, 2 tablespoons sugar and cocoa. Firmly press mixture into bottom and up the sides of a 9 inchspringform pan. Refrigerate.

Melt 12 ounces of semi-sweet chocolate chips in top of a double boiler over hot water, not over direct heat.

Combine cream cheese, eggs and 1 cup sugar in a mixing bowl until smooth and creamy. Pour in chocolate mixture, blend well. Add 1/2 cup sour cream, flour, vanilla. Blend until smooth.

In a separate bowl, mix the remaining three kinds of chips. Coat them with flour, shaking and spreading it all around each chip. Add the floured chips to the cream cheese mixture. Careful not to add the excess flour. Carefully stir to combine. Don't overstir. Pour into crust.

Bake in a preheated oven at 350° for 60 minutes or until filling is firm. Turn oven off. Cure the cheesecake 1 hour with the oven door shut, then chill overnight in the refrigerator.

We like to garnish this with fresh fruit, whatever is in season that looks great. Mint leaves are a nice touch as well.

TIP: You can cut this cake and plate up the pieces before your guests arrive if you have enough room in your fridge, and if you can resist swiping one before dinner. Good Luck!
