Donna writes: “I want to make a curry for 50 people - could you help me with the quantity and ingredients? Many Thanks! Donna” Ask-a-Caterer Replies: Always a pleasure to have the UK in our house! Using these ingredients, you’ll need to have a very large cooking area, or prepare it in smaller batches. Either way, it will work just fine:
Ingredients
1 cup vegetable oil 2 tablespoon ground cinnamon 8 onion, chopped 16 cloves garlic, minced 1/2 cup minced fresh ginger root 2 tablespoon ground tumeric 6+ cups water 16 green chile peppers, halved lengthwise 8 pounds cubed cooked poultry 3 tablespoons spicy red chili powder 1/4 cup garam masala salt to taste
Directions
Heat up the cinnamon in the oil. Saute the onion with the other spices, cook until golden. Add some of the water, and the rest of the ingredients. Continue cooking, covered, until the veggies are cooked through and meat is warmed up. Keep adding water as needed. You want a nice, saucy mix - especially if you are going to be using a chafer and holding this at your party for a while. We’re recommending that you serve this over rice, so extra liquid is fine.
