Our Best Fried Chicken Recipe is our most requested

You’ve got some work here, but if you have the time for the best - this one won’t disappoint. We only do this recipe for smaller parties.

We’ll be using a chafing dish to hold and serve the chicken, with just one sterno fuel lit, instead of two. It’s also helpful to put a kitchen towel under the chicken (cloth, not paper.)

We also suggest that you don’t cover the chicken tightly with the chafer lid - instead, keep it set sideways so that the steam and heat won’t disturb the fry coating on the birds.

Ingredients

24 boneless, skinless split chicken breasts
Oil for frying
6 cans cream of mushroom soup (60+/- ounces)
6 eggs
5 cups bread flour
3 cups cornstarch
1 tablespoon garlic powder
1 tablespoon paprika
1/2 tablespoon pepper

Directions for Best Fried Chicken Recipe

Run the mushroom soup in a blender to process smooth. Mix the soup with the eggs and seasonings.

In a bowl next to the soup, combine 3 cups of flour and cornstarch. Also have ready 2 cookie sheets covered with wax paper.

In a third bowl, have the 2 cups of flour, by itself.

Now dip the chicken in the flour, then in the liquid, and finally in the flour with the cornstarch, being sure to cover it completely. Place the coated chicken on the wax paper. Work quickly to get it done, placing each sheet of chicken in the refrigerator for 30 minutes.

Get your chafing dish up and running, with only one sterno fuel.

In a large pan or deep fryer, heat enough oil to cover the chicken to 350° . Fry the chicken until golden brown - shouldn’t be more than 6 minutes. Check a couple of pieces with your thermometer - you’re looking for 165° . When you get to that temp, remove and drain onto paper towels, then put the chicken into the warm chafing dish. Remember to put a cloth towel under the chicken.

Meanwhile, start another batch in your frying pan. Keep frying, baking, and covering cooked chicken.

Remember to check the water level under the food in the chafer. If you need to add more, always add boiling water.
