Wanda writes: “We have all my old high school friends invited for our party, so much to do. Can I bake the stuffed shrimp one day ahead of my party? With all this happening, there is no time the next day. But if I do that, won’t they dry out? How do I do it? thanks!”
Ask-a-Caterer Replies: Hello Wanda - Not to worry - we’re going to play a little hide and seek. You’ll see!

OK Wanda - click on the link above and give this recipe a good read. You’ll quickly see that we have designed it to be used in the food warmers featured below:
You will want to use a
or two to keep the Shrimp warm throughout the party - and you’ll also be using it to warm the Shrimp from baking the day before. Use the link and read all about how warmers work and where to get them. (They are not expensive, and you can use a disposable type too.)
Reading through the
Baked Shrimp Recipe, the idea is to put the shrimp on top of the stuffing and bake them. For serving right away, that will work fine. But here’s how we do it when we need to bake a day or two before:
Layer the stuffing around the shrimp - put over half of it in the pan, then arrange your layer of shrimp, then cover the shrimp with the rest of the stuffing. Bake it as described, and then refrigerate it, keeping the aluminum foil on tight.
About 30-40 minutes before the party, set up the Food Warmer, fill the water pan with hot water from the stove, light the sterno, and drop the pans of Baked Shrimp into place. Keep the cover on, and in about 1/2 hour - it will be hot and ready to serve.
The layer of stuffing on top of the shrimp will prevent them from drying out. Great taste, and so easy to do.
Best of luck, and have fun seeing your pals!
